Condimento all Aceto Balsamico di Modena 'Ricco', La Vecchia Dispensa
La Vecchia Dispensa has been ageing Balsamic Vinegar in precious wooden casks in Castelvetro di Modena, for four generations. In 1973, a small restaurant was opened on the main square, where the first recipes with balsamic were created and the guests became so enamoured with the product that they begged to take some home as a souvenir. This was the first time their vinegar was bottled and offered out. Soon afterwards, a small shop opened on the family estate and by the 90’s the vinegar was sold on markets both in Italy and internationally.
This Vecchia Dispensa ‘Ricco’ Balsamic reduction is made from an eight year, naturally thickened, barrel aged vinegar. It is rich and syrupy with a deep flavour and smooth texture. Density 1.35.
