Balsamic Jelly, La Vecchia Dispensa
La Vecchia Dispensa has been ageing Balsamic Vinegar in precious wooden casks in Castelvetro di Modena, for four generations. In 1973, a small restaurant was opened on the main square, where the first recipes with balsamic were created and the guests became so enamoured with the product that they begged to take some home as a souvenir. This was the first time their vinegar was bottled and offered out. Soon afterwards, a small shop opened on the family estate and by the 90’s the vinegar was sold on markets both in Italy and internationally.
In Italy, balsamic jelly is traditionally served with cheese but it is also fantastic served with roast meats.
