Rachel is produced by the award winning Whitelake Cheese Company at Bagborough Farm in Pylle Somerset, just off the Glastonbury festival site. They produce all their cheeses with the milk from their own beloved herd of Toggenberg, British Alpine and Saanen goats on their environmentally friendly farm. As the cheese matures it is washed regularly in a brine solution which gives it its pinky rind with orange and yellow spots. Rachel is the namesake of one of the cheese makers friends who, much like the cheese, is sweet, curvy and just a little bit nutty!
Rachel is a semi firm goats cheese with a smooth texture. It has a lightly washed rind with a subtle, sweet and nutty flavour.
This cheese is aged for 3-4 months and is made with raw goat’s milk and vegetarian rennet.
