Laganory is produced by David and Wilma from The Ethical Dairy in Scotland. The dairy itself is revolutionary in that young calves are not separated from their mothers as they are in traditional dairies but instead kept together to significantly improve animal welfare, as well as reduce the use of antibiotics, increase biodiversity and cut energy use.
Laganory is a hard but young cows’ milk cheese with a fruity and tangy flavour, underlying sweetness and very dry, crumbly texture, reminiscent of an aged Pecorino.
This cheese is aged for 2-6 months and is made with raw cows’ milk cheese and vegetarian rennet.
