The Cheddar Gorge Cheese Company is the only remaining producer of Cheddar left in the village of Cheddar, Somerset. They are a family, owned, independent, artisan cheesemakers and are rated as one of the best in the world, with their cheeses winning many accolades. Only fresh, local, unpasteurised milk is used so that the full flavour of the terroir comes through and the original character of Cheddar cheese is preserved.
Their Vintage Cheddar is aged for between 24 and 30 months on site and then for up to a year extra in our Cambridge cellars, this allows for maximum development of flavour. This ageing also means the cheese is lactose free (<0.1%) by the time it goes on sale.
