Lincolnshire Poacher is created on the eastern edge of the Lincolnshire Wolds on an organic farm run by brothers Simon and Tim Jones. The farm has been in the family since 1917 and the brothers are now the fourth generation to manage it. The Lincolnshire Poacher was created in 1992 with Douglas Campbell, a Welsh cheesemaker and was based on his cheese ‘Tyn Gryg’, taking inspiration from both Cheddar and Alpine cheeses such as Gruyère or Comté.

Cheese production didn’t start on the farm until 1990’s when Simon returned home from agricultural college, 20 years after his father Richard had begun dairying. Tim joined the company in 2000 on the sales and marketing side of the business.

Sustainability

Sustainable agriculture and farming are hugely important to the farmers and help to ensure happy cows and delicious milk. The Holstein Friesian cows graze freely so the terroir plays a big part in the flavour of each individual cheese. The family also grow the cows winter feed on site, including grass, maize and beet.
