Picos de Europa, also known as Valdeón, is made in the wooded mountains of Picos de Europa in Northern Spain from a combination of 90% cow's milk and 10% goat's milk which increases the level of acidity in the cheese and the intensity of flavour.
This cheese has been made since the 19th Century when shepherds, based high up in the mountains, would make goat’s cheeses and mature them in mountain caves. Despite the cheeses now being made with predominantly cow’s milk, the general process is the same.
The cheese is wrapped in sycamore leaves from the neighbouring forest and then matured in damp, natural limestone caves.
Our Picos de Europa is made by Queserías Picos de Europa, which was founded in the 70s by Tomás Alonso González and is now run by his grandsons Javier and Tomas Alonso.
The cows and goats are outdoor reared on mountain pastures and the cheese is made and aged close to the grazing areas, so there are no food miles involved in feeding the herds or in cheese production.
