La Vecchia Dispensa Saba Biologica di Pere
La Vecchia Dispensa has been ageing Balsamic Vinegar in precious wooden casks in Castelvetro di Modena, for four generations. In 1973, a small restaurant was opened on the main square, where the first recipes with balsamic were created and the guests became so enamoured with the product that they begged to take some home as a souvenir. This was the first time their vinegar was bottled and offered out. Soon afterwards, a small shop opened on the family estate and by the 90’s the vinegar was sold on markets both in Italy and internationally.
The production of Saba dates back to Roman times. This pear version is made with 100% organic Italian pears which have been slowly cooked down and reduced. It is both sweet and tart with an intense aroma of caramelised fruit.
