Guanciale, Renilla

Guanciale is a cut of pork taken from the cheek of a pig, characterised by lean veins of muscle crossed with fat. It is tender, rich and flavoursome and can be used cut into small chunks for the ultimate Carbonara, or sliced thinly and wrapped around fish or vegetables.
Sold by weight in slabs.
