Dragon Slayer (Gumburner 2024)

Dragon Slayer is an intensely spicy, wildly strong Cheddar-esque cheese which will really blow your head off. It is this year’s ‘Gumburner’, a cheese that changes year on year based on which of our Christmas specials has the most punch. This cheese is incredibly crystalline, with a very long lasting flavour and umami kick.

‘Dragon Slayer’ or São Jorge is an exceptional cheese from the Atlantic island of São Jorge in the Portuguese Azores. The island is particularly special as it has excellent conditions for agriculture including moderate temperatures between 12° and 25°, volcanic soil and 80% humidity.

Cheese making began with settlement of the island and introduction of domesticated cattle. By the middle of the 18th Century, cheese was being exported to the surrounding islands and abroad. São Jorge cheese was protected in 1986 to ensure the future prosperity of the island, as this cheeses is one of the key pillars of their economy.
The cheese is traditionally matured for 3 months but we mature an exceptionally rare and special version of it in our own cellars, which is exclusive to us and is over three years old when it goes up for sale each December as our Christmas special.
