Josephine, or ‘Lady Joseph’, grandmother to the company’s current owners, fell in love with a Spanish man, while he was working in Bordeaux, learning how to make wine. Within months, they were married and had moved to Logroño in Spain. Josephine missed the delicacies she had enjoyed in the South of France so began replicating recipes from her childhood, particularly thin crackers and cookies, which she eventually sold at a tea room that she opened in Haro, Rioja, Spain.
Today, Josephine’s grandchildren recreate her beloved recipes and sell them under her name ‘Lady Joseph’. They remain committed to high quality, natural ingredients including stone ground flour, and artisanal production methods such as resting the dough overnight for twelve hours before hand baking.
