Cathare St Felixe

Cathare St Felixe is a well balanced, subtle, smooth and creamy cheese which strengthens as it matures. When young, it is delicate, pure and fresh, and when aged, it is rich and decadent with a complex but sweet flavour. Either way, it deserves centre stage on any cheeseboard.
