White Asparagus Spears, Navarrico

This white asparagus is in season from April to June. Every stalk is hand cut with a curved chisel when it’s ready, having been grown in raised rows under black plastic, which stops the sun from turning the stalks green. A team of 25 ensure that every stalk is washed, peeled and trimmed before being very briefly scalded in boiling water and then brined in jars. White asparagus has a more delicate and nutty flavour than green asparagus and makes a beautiful tapas dish or starter, served with homemade aioli or a herby vinaigrette.

Navarrico are a family run business, based in San Adrian, Spain, one of the most fertile regions of the country. They are specialist producers of pulses, fruits and vegetables and grow produce across the Ebro valley in open fields which are irrigated with water from the adjacent river.
