The History, Dairy & Farm, Animals & Maker

Parmigiano Reggiano is an iconic cheese with over 900 years of history. The production zone is cherished and protected, and the cheese must be made in the provinces of Parma, Reggio Emilia, Modena and some areas of Mantua and Bologna, in Italy. The cheese make itself also follows strict traditions and must be made with raw milk, from cows that only eat grass and hay, and then must be aged for one year, though usually it is aged for significantly longer.
