Mamá Marisa Blue

Mama Marisa is a creamy blue cheese made from raw, whole cow’s milk. It has a deep flavour, with a creamy and velvety texture, and notes of green meadows and ripe red fruit, and aromas of the sea. It has an intricate, marble like, blue veining, a medium piquancy and an excellent depth of flavour.

The History, Dairy & Farm, Animals & Maker

Mama Marisa is made by Rey Silo, a dairy in Pravia, situated in the last stretch of the mouth if the Nalón River in Asturias, Spain.

Cheeses are all made by master cheesemaker Ernesto Madera, whose approach is to combine tradition with science; he is currently pioneering a movement for the production of organic foods in his area. Fresh milk arrives from the nearby dairy at the cheesemaking lab untreated and is immediately curdled to start cheese production. Every part of the process, including cutting, moulding and salting, is still exclusively done by hand.

Sustainability

The dairy advocates for raw milk, animal welfare and biodiversity. Asturias is a region of lush, green meadows, so the cows graze outdoors without interference.
