La Retorta is made by Finca Pascualete in Trujillo, Cáceres, South West Spain. The sprawling estate is made up of pastureland on which a wide variety of herbs grow naturally, including juniper, thyme, blackberry bushes, rosemary and rockrose. The pastures sit alongside a natural stream ,which provides the purest water to the farm and dairy, and benefits from it’s own stunning microclimate, all of which ensure the best welfare for the animals, and most exquisite ewe’s milk. The cheeses are handmade at dawn every morning using the fresh milk from their beloved flock. The milk is aromatic and flavourful and speaks to the countryside on which the ewes are raised.
Finca Pascualete has a vast estate on which all the livestock are raised and milked, and on which the cheeses are made, matured and wrapped for sale. Their young and passionate team have taken recipes from their ancestors, handed down through generations, to create a range of meticulously hand crafted cheeses for the modern consumer.
This is a farmhouse cheese, meaning the animals live on the same land that the cheese is produced on, limiting food miles. In addition to this, the ewes are fully outdoor reared and naturally graze, rather than consuming GM food or food grown elsewhere, again limiting the environmental impact of feeding livestock.
