Carnicas Nay raise, feed and pamper their own cattle to obtain the very best quality animals which then result in premium quality charcuterie. The company have chosen four breeds of cow for the quality of their meats’ texture, flavour and fat content.

Carnicas Nay butcher, cure, dry and mature their own ‘Cecina’, using the hind leg of the cow. It is aged for 12 and 24 months for an exceptional depth of flavour.
