Aubergine Caponata, Delicario

This capanota is created from oven-roasted aubergines and a sweet and sour vegetable sauce made with organic vegetables, extra virgin olive oil, raw cocoa and cane sugar. It is delicious stirred into pasta, served with roast chicken or as an antipasti dish.

About the Producer

Delicario specialise in small scale and sustainably produced delicatessen items, predominantly jars of meze and antipasti. They produce a number of regional European delicacies and follow a ‘farm to table’ approach, using only the best producers and showcasing naturally delicious food.
The company name Delicario is split into two halves - ‘Deli’ is a reference to their business as a delicatessen but also hints to the word ‘delicious’, and ‘cario’ is the Latin word for cherished or precious, and reflects the hand selected, luxurious nature of their products.

The aubergines and accompanying vegetables are all grown on a sun-drenched, organic farm in Sicily. The farm is a small agricultural co-operative which runs without using any pesticides or chemical fertilisers.
