Cooleeney Farm in Tipperary is run by the Jim and Pat of the Maher family, whose family have worked the land there for an incredible four generations. In 1905, the family won awards for the quality of the milk produced there and they continue to win national and international awards to this day.
The family started their journey in Brie-style cheesemaking in 1986, using their own exceptional quality milk. Their herd of Friesian cows are all bred and raised on the farm on wonderful green pastures, which have peaty soil and are covered in blankets of clover, to provide a wonderfully nutritious diet for the animals and delicious milk for cheese production.
The cows are outdoor reared, home fed and the cheese is made and matured on the same site as the grazing fields, so there are no food miles involved in production.
