Ibores Paprika is a protected cheese which is handmade in Extramadura by small artisanal producers, with milk from their own tiny smallholdings. The protected area in which this cheese is produced has an incredibly varied landscape, with high peaks, beautiful valleys, forests of oak and rocky flats. Thanks to the Mediterranean forests, one of the best food sources for the goats are fallen acorns, alongside thyme and heather for a rich diet and in turn, flavoursome milk.

Sustainability

The goats are outdoor reared on mountains and valleys and the cheese is made nearby by artisanal producers, so there are very few food miles involved in production.
