Crémeux de Jura (Vacherin Mont d’Or alternative)

Crémeux de Jura is wrapped in a band of spruce, like it’s famous sister cheese the Vacherin Mont d’Or. This band of sapwood imparts a woody and nutty flavour, which pairs beautifully with the sweet, milky and buttery notes of the cheese, and its silky texture that becomes gooey with age.

Crémeux de Jura was created by Gentianes Dairy, in the heart of the department of Jura in the Franche-Comté region. Cows graze on the vast, mountainous pastures of the area, surrounded by trees, the sapwood of which will eventually envelop each cheese, meaning that it is truly a product of its terroir. The floral flavours from the local alpine meadows come through in the milk, while the spruce from the trees adds depth and complexity to the cheese. The cheese is made seasonally in autumn and winter.
