The St Tola Ash is made by Siobhán Ní Gháirbhith, teacher turned cheesemonger, at Inagh Farmhouse Cheese in Clare, Ireland.

St Tola cheese is extremely good for you - it contains high levels of calcium, protein, Vitamins A and K, phosphorus, niacin and thiamin, as well as only containing 1% salt.

Sustainability

Saint Tola farmhouse are committed to sustainable farming so their herd of Saanen, Toggenburg and British Alpine goats live on 65 acres of unspoiled pastureland. They feed on buttercups, meadow sweet and wild garlic alongside other wild flowers and herbs. In the winter, they live in vast, clean and comfortable sheds and are fed on homegrown hay.

All the kids are born on the farm and are left to spend a long time with their mothers, rather than being separated early like on many large production farms. They are then hand reared. This results in happy and healthy animals and an extremely high standard of welfare. Retired goats are given away as family pets or donated to an international aid agency that provides livestock to poverty stricken families in developing countries.
