Mimolette

Mimolette is a hard cheese with an iconic electric orange colour and a smooth, dense and firm texture. The cheese has a light savoury tang but the predominant flavour is that of caramelised butterscotch. It has a good level of salt, a welcome hint of acidity and a lasting sweetness on the palate.

Mimolette is a traditional French cheese made close to the city of Lille in Northern France, but was inspired back in the 17th century by Dutch recipes for Edam cheese. Louis XIV wanted to create a native French cheese to replace the then popular Edam after his minister Colbert forbade the importation of foreign goods to improve the national economy. It was first coloured with carrots but is now coloured with Annatto, a totally natural and very popular dye made from seeds of the Achiote tree in Central and South America.
Mimolette has a moon like surface, covered in dusty craters - these are caused by cheese mites which eat away at the outside, helping the cheese to mature and adding flavour.
