About the Producer

These saucissons are made by Le Cayrolais, a small, artisanal charcuterie company based in Cayrols, Cantal in the Auvergne region of France. The company was founded in 1908 and follows ancient recipes and traditional methods, still using a wooden dryer to mature their saucissons. All the pigs used in their charcuterie are raised in the region and sourced from small local farms.
