San Simon de Costa PDO

The San Simon de Costa is a bouncy, buttery, semi firm cheese with a smoky flavour. The cheeses are smoked over green Abedul birch wood from trees on the maker’s property. This gives the cheese a wonderful golden orange colour, a wood fire aroma and a smoky taste.

The origins of this handcrafted cheese are a little uncertain. It is widely believed that San Simon de Costa cheese dates back to Roman times, though others think it was first created in the early 20th Century by farmer’s wives, using Galician Blonde cow’s milk, for home consumption. Either way, it was granted protected status in 1990 to preserve the traditional production methods, the maturation process and the quality.

This San Simon de Costa is made by fourth generation cheesemakers Javier and Sonia Pineiro, along with their small team of 4. It is made next to their home in Lugo, Galicia using milk from small, local farms.
