Rovethym is a small production goat’s milk cheese from Provence in France. The ‘Chevre de Rove’ goats are able to roam the pastures of the Alpes de Provence, enjoying herbs and wild flowers as their primary diet and produce a very rich and flavoursome milk in return.
Rovethym is a dense and creamy, semi soft cheese, infused with wild thyme. It is herbaceous, fragrant and beautifully fresh.
This cheese is aged for 2 weeks and is made with raw goat’s milk and traditional rennet.
This cheese is often covered in blue or green spots, this is seasonal, perfectly normal and does not affect the taste or quality of the cheese.
