Pecorino Riserva del Fondatore
Pecorino Riserva del Fondatore is made by Angela and Simone in Tuscany, Italy from the milk of highly prized Tuscan Maremma ewes and is aged in the family’s caves for at least a year, giving it a completely new level of flavour.
Pecorino Riserva is an intensely fruity cheese with a notable sweetness and crystalline texture. It has notes of dried or fermented fruit and has a long finish on the palate.
This cheese is aged for at least 12 months and is made with raw ewe’s milk and traditional rennet.
