Pecorino Fiore Sardo
Pecorino Fiore Sardo is a traditional aged ewes’ milk cheese from the island of Sardinia. It is made exclusively with raw, local, whole milk from the island, on which the sheep graze on wild grasses, shrubs and herbs, the flavours of which are present in the final cheese.
Pecorino Sardo is an extremely strong, flavoursome, spicy and piquant cheese with good sharpness, tang and acidity and a notable fruitiness. It has a very dry, crumbly texture due to it’s long maturation.
This cheese is aged for 1 year and is made with raw ewes’ milk and traditional rennet.
