Number 8 Nduja, Tempus
Tempus are a British charcuterie company who only use ex-breeding sows and ex-dairy beef. This guarantees that all the animals are over 4 years old and weigh in excess of 180kg, ensuring beautiful fat ratios, marbling and an intense flavour that can’t be matched with young, small animals.
All Tempus charcuterie is butchered, cured, fermented and aged (in some cases for a full year) at a purpose built facility in Weybridge.
Tempus Number 8 is a soft, fully aged and ready to eat sausage, inspired by Nduja and Sobrassada.
