Neufchatel
Neufchatel cheese is one of France’s oldest cheeses, dating as far back as 1035. It was originally made in Neufchatel-en-Bray in Normandy and now has protected AOC status. The heart shape was supposedly introduced when French farm girls fell in love with British soldiers during the Hundred Years War and wanted to show their affection.
Neufchatel has a soft but dense texture with a bloomy rind and nutty, mushroom flavour.
This cheese is aged for 8 to 10 weeks and is made with raw milk and traditional rennet.
