Guanciale is a cut of pork taken from the cheek of a pig, characterised by lean veins of muscle crossed with fat. Isola Buona guanciale is tender, rich and flavoursome and can be used cut into small chunks for the ultimate Carbonara.
This will be sent either wrapped in wax paper or vacuum sealed, depending on availability.
