Flower Marie is an artisan, soft, mould ripened cheese made from unpasteurised ewes’ milk from Greenacres Farm in East Sussex. The recipe was developed by the late James Aldridge and then passed on to the Golden Cross Cheese dairy in the early nineties.
Flower Marie is a squidgy and creamy cheese with a bloomy rind. The flavour of the cheese is mild, sweet and grassy, with earthy undertones.
This cheese is aged for 2 to 4 weeks and is made with raw ewes’ milk and vegetarian rennet.
