Fennel Salami

Fennel Salami is believed to originate in the Middle Ages in Tuscany. At the time, black pepper was the standard seasoning added to salami but it was far too expensive for most of the general population, so many turned to fennel seeds, which grew in abundance in the Tuscan countryside.
Isola Buona Fennel Salami is made to ancient methods of dry curing using whole wild fennel seeds and high quality finely minced pork.

Italian Pork Cheek, Sea Salt, Spices, Dextrose, Antioxidant: Sodium Ascorbate, Preservatives: Potassium Nitrate, Sodium Nitrate.
