Cooleney Farm is run by the Jim and Pat of the Maher family, who are now fourth generation cheesemakers. Their herd of Friesian cows are all bred and raised on the farm on wonderful green pastures.
Cooleney is a buttery and creamy soft cheese, similar to a Camembert style. It is slightly chalky in the centre, with a creamier texture towards the rind, and has a mushroom flavour on the palate.
This cheese is aged for 8 to 10 weeks and is made with pasteurised cow’s milk and vegetarian rennet.
