Cambridge Bleat
Cambridge Bleat, otherwise known as Dorstone, is a wonderful English goat’s cheese named after the beautiful village of Dorstone, overlooking the River Wye in Herefordshire. We have been ageing Dorstone cheeses in our Cambridge cellars for over two decades and their old nickname ‘Cambridge Bleat’ has simply stuck!
Cambridge Bleat is a strong, full flavoured, dry and crumbly, ash rolled cheese with a lactic, citrus tang and salty, goaty flavour.
Cambridge Bleat is aged for 4 to 5 weeks and is made with raw goats’ milk and traditional rennet.
