Berkswell
Berkswell is made by a team of women at the dairy on Ram Hall Farm in the small and charming village of Berkswell, Warwickshire. All the milk comes from their own flock of Freisland ewes who were originally introduced to the estate in 1989. The ewes are now all born and bred on the farm and are split into 4 groups so that lambing can be staggered throughout the year, and cheese production uninterrupted. The ewes eat an amazing diet of grass, peas, wheat, barley and oats, all grown on the estate.
Berkswell has a firm, dense and slightly granular texture with complex sweet, nutty and fruity flavours and a brilliant depth and length on the palate.
This cheese is aged for a 6-8 months and is made with raw ewe’s milk and traditional rennet.
