Cheesemonger Jane Stewart and her partner Robert have been dairy farmers for over 50 years in Fife, Scotland. In 2007, they decided to turn to cheese making, using the raw milk from their Holstein-Friesian cows. The first cheese they created was this crumbly and lactic Anster cheese and following it’s success, they have now also turned to Cheddar production after learning the traditional techniques associated with this famous cheese!

Anster is fresh and milky with a crumbly texture and lactic flavour, reminiscent of Caerffili.

This cheese is aged for 2-4 months and is made with raw cow’s milk and traditional rennet.
