Picos de Europa
Picos de Europa is made in the wooded mountains of Picos de Europa in Northern Spain from a combination of 90% cows’ milk and 10% goats’ milk which increases the level of acidity in the cheese. The cheese is wrapped in sycamore leaves from the neighbouring forest and then matured in damp, natural limestone caves.
Picos de Europa is a beautifully rich and creamy cheese with a strong blue veining and salty and spicy flavour.
This cheese is 1.5 months old and is made with pasteurised cows’ and goats’ milk and traditional rennet.
