Brunost
Brunost is a traditional Norwegian creamed, whey cheese made from a mix of cows’ and goats’ milk. It was created in the 1800’s by Anne Hov who came up with the idea of adding cream to the whey when it was boiling down. It became so popular at the time that it helped significantly in bringing the region of out recession.
Brunost is a firm cheese with a very supple texture. It is particularly sweet and caramel-like in flavour and eats, in both flavour and texture, like fudge.
This cheese is not aged and is made with pasteurised cows’ cream and pasteurised goats’ milk. It does not contain rennet so is vegetarian.
