Beaufort dates back to Roman times and is made from the milk of Tarentaise cattle, an ancient mountain breed, in the Savoie region of the French alps. The cows graze on exquisite summer pastures, high in the mountains and unpolluted, eating a range of wonderful Alpine flora, perfumed flowers and aromatic herbs.
Beaufort d’Été is a beautifully smooth and creamy hard cheese with a gorgeous pale gold colour. It is both nutty and fruity with a complex sweetness.
This cheese is aged for 12 to 18 months and is made with raw cows’ milk and traditional rennet.
