Beaufort d’Été

Beaufort dates back to Roman times and is made from the milk of Tarentaise cattle, an ancient mountain breed, in the Savoie region of the French alps. The cows graze on exquisite summer pastures, high in the mountains and unpolluted, eating a range of wonderful Alpine flora, perfumed flowers and aromatic herbs.


This Beaufort d’Été Special Reserve has a sweet aroma and dense yet creamy texture, with a salty crunch. It is bold, tangy, strong and spicy in flavour and has a very long finish on the palate. 


This cheese has been aged in our Cambridge cellars for over 18 months and is made with raw cows’ milk and traditional rennet.
