Haut de Barry

Haut de Barry is an exquisite French ewes’ milk cheese made on the Plateau du Larzac in Southern France. The cheese is handmade by a cooperative set up in 1996 by 11 local shepherds who wanted to create a small production sheeps’ cheese that didn’t need to meet huge industry quotas. The cheeses are aged in local caves so take on the taste and smell of the surrounding flora.


Haut de Barry is a beautifully smooth and creamy hard cheese with complex, sweet, nutty and earthy flavours.


This cheese is traditionally aged for around 10 months (sometimes up to 2 years), is made with thermised ewes’ milk and traditional rennet.
