Paulinetoises

Paulinetoises is made in the Tarn region of Southern France. The herd of sheep live freely on an 85 hectare open space and feast on the green meadows for most of the year, being fed homegrown hay and cereals indoors in the depths of winter.

 

Paulinetoises starts off as a soft, mousse-like, fresh cheese with an almost whipped texture and rich creaminess. As it ripens, it becomes runny with a full, ultra creamy flavour. It is incredibly indulgent and a staff favourite here in Cambridge!


This cheese is aged for 1 month and is made with raw ewes’ milk and traditional rennet.
