Bouyguette
Fromagerie Segalaform, producers of Bouyguette, was founded in 1978 in the Midi-Pyrénées region of France. The herd of 150 goats graze on the ‘Colline aux Chevres’ which has a diverse flora and produces an exceptionally high quality goats’ milk. Each Bouyguette is shaped by hand and wrapped in linen cloth.
Bouyguette has a firm, dense and chalky texture with a mild, delicate flavour. As it ages, the cheese takes on a fuller, goaty flavour with herby, aromatic undertones.
This cheese is aged for 3 weeks and is made with raw goats’ milk and traditional rennet.
